See the Process Firsthand

The experience begins at our neighboring harvest facility, where students learn about livestock handling, harvesting, inspection, sanitation, and the responsibilities involved in producing a safe food product.

From there, students visit Harris County Meats to see how carcasses are fabricated into the familiar cuts found in the meat case. Our team walks students through the process and introduces them to the skills and careers involved in professional meat processing.

Students can also learn about poultry production at our on-site poultry processing facility located inside the meat market, providing a rare opportunity to see multiple areas of the meat industry in one educational experience.

Food Safety Beyond the Classroom

The tour also introduces students to HACCP and real-world food safety practices, including sanitation, temperature control, contamination prevention, inspection, documentation, and traceability.

By connecting classroom lessons with an operating facility, students gain a better understanding of careers in animal science, meat science, food safety, inspection, processing, and retail meat operations.

Students work hard raising their animals, and we want them to see how that work connects to the next stages of agriculture—from livestock production and harvesting to processing and the consumer’s table.
